Trying to find some sort of balance between, want/need, kids/me, My life and not keeping up with the Jones’… So that’s where I’ve been. Somewhere between real life and vicariously living through pinterest 🙂

B has started her 3rd and final year at preschool. She missed the cut off for Kindergarten by 20 days, and actually I’m thrilled about it. I like the idea of her being an older kindergartener, maybe it won’t make a difference but in my mind being older will make her more of a leader in school…

K is crazy, adorable and gross all at the same time. She’s a finger sucker, I think I’ve posted pictures of that before… Well now she sticks her available finger up her nose whenever she’s sucking her fingers, honestly it’s a perfect finger holder so I don’t blame her but the looks people give are awesome!

We lost Merlin our big Newfie at the beginning of July, it’s been a rough year for us with our furry friends.  I feel unbelievably luck to have had him for almost 11 years, he will always have a special place in my heart.  Hunk and I have decided to take a year off, if we make it that long, from another dog.  I find myself in a tug-o-war over the whole dog issue, so until my head and heart aline I will go along with the year mark.  But we did get 2 new Kitties, yes We’re insane!  Franklin and Penelope were adopted in August and we are head over heels in love with these two crazy balls of crazy…  Our big cats on the other hand have not so much.
Hunk and I are making lots of changes. I’m taking a new job and saying good bye to the ladies that I’ve worked with for the last 11 years, just writing it makes me want to cry. But new job, better hours and more money, see ya later ladies we’ll have lunch…  Hunk has found out that his boss is thinking of selling him the company in the next few years, this is amazing news.  And we are trying to have another baby, it takes us a long time to get pregnant, but that’s another post.

So that’s it in a nutshell. Our craziness has just been intensified and we are still trying to survive.

But everyday I wake up and am thrilled that this is the life I was given

I’ve decided that 4 year olds are just small psychotic adults.  B can turn crazy in 3 seconds flat and then just as quickly look at you like you’re the crazy one for telling her she’s out of control.  Although for the most part she is amazing in every way, there are days when I’d like to put her up for auction on eBay (I’m only slightly kidding) But then the kid goes and says something that makes me want to laugh, squeeze her and never let her grow up.

The other day she told Hunk that if she could be any animal it would be a bird.  Hunks reply “Oh I’d love to be a bird too.  So you could fly?”  B responded in confusion “Fly?  No so I could lay an egg”

So Feb and March really side lined our little house. February we all had the cold from H. E double hockey sticks. Which translates to can’t breath let alone run. We did manage to walk almost all of February even in the rain, don’t worry the chicks were safe inside their chariots.
March well basically March can suck it. First my husbands grandmother passed away. She was one of the most amazing women I have ever had the privilege of meeting. She was 96 and lived life to the fullest. She passed peacefully in her sleep and we couldn’t have asked for a better way for her to go. She had her children there and she was at home. I hope I’m as lucky.
Then 2 days before her funeral Hunk had to have an emergency appendectomy. Not a good week for us at all. Luckily he was released from the hospital the day after his surgery and he is back to his normal self. And me, me you ask…
I’m a stressed mess and I recently had stitches. Yes I had manged to avoid stitches for 31 years and last Wednesday I put my finger someplace I shouldn’t have and off to the ER I went.
Yes this is a mini wine fest, but really it’s been a long couple of weeks and I would really like a big hot chocolate right about now, with mini marshmallows and a little more peppermint schnaps than is needed 🙂
I’m feeling better today, got back to the gym and had a pretty productive day. Also because I have stitches on my hand, I get out of washing dishes and kids!!! Who knew there were perks to having stitches.

Who knew this week was on warp speed?  Not Me!  I missed the memo and apparently it decided to smack me square in the face today!  I was busy from the second my eyes opened till, well now!

B has gymnastics on Thursday, which might be the only real reason that I realized what day it was.  Anyway after I got off work and raced home to “relax” I realized that I had a few hours till B’s class.  During those 2 hours I had to run to the post office and mail 500lbs worth of stuff and head to the bank and open a new account since my old bank was trying to rob me blind, like I wouldn’t notice!  Then I remembered that I couldn’t find my tweezers, with eyebrows like mine tweezers are a must!  They are waxed on a regular basis, but these puppies have super power or something cause they grow like weeds!  Anyway $45.00 later I have tweezers and a bunch of other things I didn’t know I was out of, including mini Cadbury eggs!  Did you all know that the giant Cadbury eggs are so 1989 and they now have these little mini eggs?  Where have these been all my life?

They are the perfect amount of goodness without the mess, and did I mention they come in a pretty little dozen?!  Anyway we made it to gym class with 25 seconds to spare, PHEW!  After class we raced home to get some sort of dinner started.  Today has totally been one of those days.  You know the kind that exhausts you just re-capping it. (In a sheepish tone) I didn’t make time today to get any exercise.  Although I would love to go right now, I’m guessing 11PM isn’t idea workout time.  Instead I’ve been thinking about just a little me time.

I’m dreaming of the book on my night stand so I’m thinking I’ll pawn off all cleaning responsibilities to Hunk and head to my cozy bed and crack open that book.  Today I’ll exercise my mine, because it’s in desperate need of a little weight lifting!

Just cause I love them!

I’m keeping myself accountable for all my exercise and I’m using you all as a keep me honest audience.  So thank you for being my checks and balances!

We made it out for a walk today, as a family.  Hunk and I packed the girls into the strollers and gave B enough books to fill a small library, K was ready for a nap so she was out before we even started to move.  I love our evening walks almost as much as I love our morning runs.  It’s great because we are all together and B will read us her stories or she’ll read them to herself actually and we just listen.  Without fail B will eventually fall asleep or get out and run, both are good.  Today was a sleep day for both the girls.  Which gave Hunk and I 5 miles to talk.

It’s amazing how many problems Hunk and I can solve while walking and how wonderful life can seem.  I’m not sure if it’s the endorphins that are released during exercise that makes things all sort of come together or if it’s just a change of scenery, but whatever it is I love it.  I think it’s the exercise high that keeps me coming back and craving more.

The high I get from walking is totally different from runners high.  Runners high for, me, is where I feel like I’m running on clouds and I have my own personal cheer team in my head singing eye of the tiger as loud as possible.  It’s an all over surge of power and excitement.  While a walking high is a combo of being able to talk, think and breath in an open space.  I never get the same rush from running or walking in the gym, which is probably why I rarely do cardio at the gym.

So what gives you the rush?  What gives you the need it, want it, have to have it feeling?



Making it official Tuesday

Success!!! I made it to the gym tonight! Almost a full hour of sweating and listening to non-kid friendly music. Ahhh I can still feel it! I’m sure my ass will hurt tomorrow, but I’m ready to go again.
Today I worked my favorite body part, Legs.  Tomorrow I’m aiming for arms, I think.   I’ll write-up a little exercise plan in the AM and get myself to the gym at some point tomorrow.
I think the part I like the most is the time to just be in my own head. I hear the music and see other people, but there isn’t anyone pulling on my pants or yelling that they are thirsty or need something. I am not responsible at that moment for anyone other than myself.
I’m making it official and sticking to it!  Also there is nothing like coming home and seeing the smiles on those little faces!  I’m doing this for them too.  When mom is happy everyone is happy!



Lemons have never been so sweet! March 8, 2011

I love to cook and even more I love to eat. I enjoy cooking a little of everything but my favorite is baking. Which is good, or bad because I have a sweet tooth that can’t be satisfied and it craves baked goods. With that being said, my parents gave me a cookbook for Christmas.

So last night something fell out of this cookbook, I picked it up and set it on the counter. About an hour later my sweet tooth was screaming and the kids weren’t! Perfect, I thought I would bake something. I went to move the card that fell out of said book and actually looked at what it said. It said “Lemon Pudding Cake” Seriously!!! How did I not eat the card itself after reading that?  I’m still not sure. I ran outside to our ever fertile lemon tree and brought in about 10 lovely lemons and got to work. I am sorry to say that I didn’t take any pictures of the process or the final product, mostly because I was too excited to think. But 10 minutes of prep and 55 minutes of baking and my mouth was singing!!! This might be my new favorite dessert, no joke! It’s sweet enough to satisfy and sour enough to be refreshing, tell me that isn’t a marriage you want to be apart of?!

Since I really don’t want to post this long-winded thing without a picture here’s one of K enjoying a little butter, kidding she was just fluffying it like the recipe said too. 

Lemon Pudding Cake (where have you been all my life?!)

4 egg whites, beaten stiff but not dry (think almost meringue but still a little wet under)

4 egg yolks
2 tablespoons of butter
3/4 cup sugar
4 tablespoons flour
1/2 cup fresh lemon juice (I’m guessing you could use the stuff out of the bottle thing too)
1 tablespoon grated lemon zest
2 cups light cream or milk (I used milk and it was still heavenly!)

Place a rack in the middle of the oven. Preheat the oven to 350 F. Butter either a 1 quart ceramic souffle dish or a 9X13 glass pan. You will also need a larger ungreased 10X15 pan to use during the baking process. You will need boiling water for the water bath.

Separate the eggs and beat the egg whites until stiff but not dry. Set aside. Cream the butter until light, and then add the sugar and flour and beat until light and fluffy. Add the egg yolks, one at a time, beating well after each addition. Add the lemon juice, zest and light cream. Mix together. Fold in 1/4 of the beaten egg whites and mix to ligthen, then slowly fold the remaining egg whites in, be careful not to overmix. Transfer the mixture to the prepared baking dish, our boiling water into the larger pan to a depth of at least 1 inch. Set the baking dish with the cake inside the large pan and place in the oven.

Bake for about 1 hour, or until the top is golden brown, the center is just set, and the top springs back when pushed lightly with your hand. Let the cake cool on a rack for 10 minutes. Serve warm. It’s also beyond amazing cold the next morning, if it makes it that far!
